In 2018, I set my goal of creating a world-class restaurant alongside business partners Joel Adams and Michael Holden. To realise my vision, I required a blank canvas and found what I was looking for during the construction of the revitalised Ancoats neighbourhood.
Every day, I steward a studio built for efficiency, collaboration and transparency - a space designed to turn imagination into execution.
Precision, consistency and intent are the cornerstones of my work. I’m fascinated by tension; bold flavour contained within fragility. For me, volatility is inelegant. Control, clarity and restraint are what gives me deep satisfaction.
mana is the ongoing pursuit of those values.
