In 2018, I set my goal of creating a world class restaurant alongside business partners Joel Adams and Michael Holden. To realise that vision, I required a blank canvas and found what I was looking for during the construction of the revitalised Ancoats neighbourhood.
Every day, I steward a studio built for efficiency, collaboration and transparency. A space designed to turn imagination into execution through discipline, precision and intent.
My work is shaped by tension and contrast. Fermentation and fire refined through restraint. Aggression contained within elegance. Emotion disciplined by control. I’m fascinated by bold flavour carried with fragility, and luxury existing alongside decay.
For me, volatility is inelegant. Clarity, consistency and structure allow intensity to exist without chaos.
Work is the maintenance of those values. The experience is the expression.
